Basbousa with almond recipe
Basbousa is a sweet cake originating from Egypt flavoured with almonds and semonlina.

Ingredients
For the cake
200g melted butter
1 tin /397g sweetened condensed milk
1½ tsp baking powder
320g semolina
100g ground almonds
250ml water
For the syrup
400g sugar
375ml water
1 tsp lemon juice
1 tbsp rose water
2 tbsp ground almonds
How to prepare basbousa
To prepare the cake
- Combine butter, sweetened condensed milk and baking powder and stir well. Add semolina, ground almond and water and stir until well combined.
- Pour and level the mixture into a 28cm x 24cm baking tin. Bake in a 190°C preheated oven for 35 minutes or until the top is golden.
- Remove from oven the and pour all over the cooled syrup. Place in the fridge to cool completely, cut into diamond shapes and serve.
To prepare the syrup
- Add sugar and water to a saucepan. Bring to boil and simmer for 6-8 minutes.
- Remove from the heat and stir in the lemon juice, rosewater and ground almond.
